No longo inverno alemão, não há nada melhor do que refeições substanciosas. Uma seleção de típicos pratos de inverno que aquecem não só o estômago, mas também o coração.
Sauerbraten
Este assado de carne marinada normalmente é feito de carne bovina ou de cavalo, mas há também outras variações. A carne fica de molho por até dez dias em vinho, vinagre e temperos, o que a torna especialmente macia. Os acompanhamentos típicos são couve roxa e um bolinho cozido de batata.
Rinderrouladen
Embora seus ingredientes lembrem um hambúrguer, o bife enrolado é, ao contrário de fast food, uma especialidade para ocasiões festivas. Bacon, pepino, cebola e mostarda são enrolados dentro do bife, para incrementar o sabor da carne. A carne com molho é servida com batatas cozidas.
Knödel
Este bolinho de batata cozido é um complemento extremamente versátil para pratos de inverno. Muitas vezes é servido como acompanhamento, mas também pode ser o prato principal ou ingrediente de uma sopa. E até como sobremesa é muito apreciado, como é o caso do "germknödel" na Baviera e na Áustria.

"Cuidado, quente e gorduroso!" dizem os alemães, brincando, quando querem passar num lugar cheio de gente. É bem o caso destes bolinhos fritos de batata ralada. Em muitos lugares, são considerados uma refeição. Podem ser servidos com melado e até mesmo numa versão mais extravagante, com fatias de salmão defumado e quark.
Fritattensuppe
Quem chega em casa depois de uma caminhada na neve anseia por uma sopa quente. E é fácil de fazer: basta um bom caldo de carne ou de legumes, tiras de panqueca e salsa picada. Pronto, aquece até a alma!
Käsespätzle
Esta especialidade de massa suábia é uma prova de que um prato gostoso não precisa ser complicado. À massa cozida são acrescentados cebola e queijo alourados na frigideira.
Maultaschen
Há muitas versões sobre a origem desta especialidade suábia, parecida com um ravioli gigante. Sabe-se apenas que antigamente era alimento de pobre. Recheados com restos de pão, carne ou legumes, valiam por uma refeição. Seja na sopa ou frita, a maultasche é consumida em toda a Alemanha, principalmente no inverno.
Grünkohl
Até nós brasileiros conhecemos a versatilidade da couve. E nos últimos anos ela está cada vez mais em moda na Alemanha, principalmente no norte do país, onde faz parte da cozinha tradicional. Servida com batatas e salsicha, é um prato típico de quermesses e feirinhas de Natal.
Kohlroulade
Poderia ser uma especialidade vegetariana, mas não é. A folha de couve enrolada esconde a carne moída. Cozida com molho de carne ou de tomate, é um prato ideal para dias frios.
