The Incas started freeze-drying ruki potatoes thousands of years ago. The resulting "chuño" was ultra-light, would keep for up to three years, and didn’t attract mice. These potatoes have been credited as a major factor in the rise of the Inca empire, by providing non-perishable food for soldiers away at war.
