Truffled potatoes
(Serves one)
Ingredients:
1 large potato
60 ml cream
1 black truffle
1 summer truffle
olive oil
salt and pepper
butter
Preparation:
Peel the potato, coat it with butter, wrap in aluminum foil and bake in oven until cooked. Using a cheese grater, grate the black truffle into small pieces, blend it with the cream, add pepper and salt. Reduce the truffle-cream mixture for five minutes at high temperature. Cut the baked potato in half and pour the hot truffle cream over it. Using a truffle slicer, cut the summer truffle into wafer-thin slices and garnish the potato with them. Add salt and pepper to taste. Drizzle olive oil over the truffled potato. Bon appetit!
