Soupe de Chalet
Chef Haysan Dula prepares this special soup for us:
INGREDIENTS für 10 Portions:
salt & pepper to taste
50 grams of butter
300 grams of original Gruyère cheese
2 litres of milk
1 litre of water
½ litre of cream
2 onions
5 potatoes
2 handfuls of macaroni
3 leeks
2 stalks of celery
2 handfuls of fresh spinach
1 handful of wild garlic (aka ramsons or bear's garlic)
Cut the onions, leeks and celery into thin strips. Sauté them all in butter in a large soup pot. Add the spinach and wild garlic.
Add the milk and water and bring to a boil. Throw in the potatoes and macaroni. When cooked, pour in the cream and stir well.
Grate the original Gruyère onto each portion of soup when served.
Garnish with chives and croutons.
