Global Snack: Shifta from northern Iraq

Shifta is a traditional dish in northern Iraq. Karwan Ismaeel opened a shifta snack bar in the center of Sulaymaniyah about a year ago. His minced-lamb version is served with lots of fresh veggies all heaped on fresh pita bread. Business is booming.
